Mini Glazed Donuts

You will need...

For the donuts:

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/2 cup non-dairy milk
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 flax egg

For the glaze:

  • 1 cup confectioner's sugar
  • 2-3 tbsp non-dairy milk
  • 1 tsp vanilla extract

Directions:

  1. If you're using a donut press like I did, lightly grease the donut molds with cooking spray and turn on the device. If you're using a donut pan, lightly grease the pan and preheat your oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, combine flour, sugar, cocoa and baking powder.
  3. In a separate bowl, add non-dairy milk, olive oil, vinegar, vanilla extract and flax egg. Whisk to combine.
  4. Gradually pour the wet ingredient mixture into the dry, and stir to form a thick batter.
  5. Transfer the batter into a Ziploc bag and seal it shut. Snip one corner off.
  6. Fill each donut mold. If you are using a donut pan instead of a press, only fill it about 3/4 way.
  7. Follow instructions for donut press (usually 3-5 minutes) to cook the donuts. If you are using a donut pan, bake at 350 degrees for approximately 10-12 minutes.
  8. While donuts are cooling, prepare the glaze by combining confectioners sugar with 2 tbsp non-dairy milk and vanilla extract. Add more milk to desired consistency. 
  9. Glaze your donuts! You should do this while they are still slightly warm (but not too hot).
