Pumpkin Spiced Pear Muffins
You will need:
1 cup all purpose flour
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp baking soda
1/2 tsp salt
1/4 cup coconut oil, melted
1/4 cup maple or agave syrup
1 chia egg
1 tsp vanilla extract
2 medium pears, pureed in a blender
Directions:
Preheat oven to 350 degrees Fahrenheit. Lightly grease a muffin pan.
In a medium mixing bowl, combine flour, baking powder, cinnamon, ginger, nutmeg, baking soda and salt.
In a separate bowl, whisk together the oil, maple syrup, chia egg, vanilla extract and pear puree.
Gradually add the dry mixture into the wet mixture and stir until a thick, even batter forms.
Spoon the batter into your muffin pan so each well is about 3/4 full. I made 8 muffins.
Bake at 350 degrees for about 45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool slightly before enjoying.
