Pumpkin Spiced Pear Muffins

You will need:

  • 1 cup all purpose flour

  • 1/2 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/4 cup coconut oil, melted

  • 1/4 cup maple or agave syrup

  • 1 chia egg

  • 1 tsp vanilla extract

  • 2 medium pears, pureed in a blender

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a muffin pan.

  2. In a medium mixing bowl, combine flour, baking powder, cinnamon, ginger, nutmeg, baking soda and salt.

  3. In a separate bowl, whisk together the oil, maple syrup, chia egg, vanilla extract and pear puree.

  4. Gradually add the dry mixture into the wet mixture and stir until a thick, even batter forms.

  5. Spoon the batter into your muffin pan so each well is about 3/4 full. I made 8 muffins.

  6. Bake at 350 degrees for about 45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool slightly before enjoying.
