Roasted Red Pepper Hummus

You will need:

  • 1 15 oz can white beans, drained and rinsed

  • 1 12 oz jar roasted red peppers + 1/4 cup of reserved liquid

  • 1/2 avocado, chopped

  • 2 tbsp lemon juice

  • 2 tbsp tahini

  • 2 tbsp nutritional yeast

  • 1 tbsp minced garlic

  • 1/2 tsp crushed red pepper

  • 1/2 tsp smoked paprika

  • salt and pepper, to taste

Directions:

Add all ingredients to a high-speed blender or food process and puree until smooth. Serve with warm pita or chips.
