Thai Curry Tofu Scramble

You will need:

  • 1 tbsp coconut oil

  • 1 clove garlic, minced

  • 2 large red bell peppers, diced

  • 1 cup snowpeas, chopped

  • 1/3 cup full fat coconut milk

  • salt and pepper, to taste

  • 1/2 tbsp Five-Spice

  • 1/2 tbsp Garam Masala

  • 1-2 tsp turmeric

  • 1 14 oz block firm tofu, drained and pressed

Directions:

  1. To a skillet on medium heat, add coconut oil and minced garlic. Sauté for about two minutes.

  2. Add red bell peppers and snow peas. Sauté for about 8 minutes, or until softened.

  3. Add the coconut milk, salt, pepper and spices. Stir until combined

  4. Slowly crumble the block of tofu into the skillet. Using a spatula, scramble the tofu for about 5 - 7 minutes. It should be nice and yellow.

  5. Serve warm over toast.
