Herb-Roasted Fingerling Potatoes

You will need:

  • 1 lb fingerling potatoes, scrubbed and rinsed
  • 1/4 cup extra virgin olive oil
  • 1-2 tsp salt
  • 1 tsp dried parsley
  • 1 tsp dried oregano

Directions:

  1. Preheat oven to 500 degrees Fahrenheit.
  2. Place fingerling potatoes in a large mixing bowl. Add oil, salt and herbs. Toss to coat
  3. Place the potatoes on a baking tray. Bake at 500 degrees for about 20 minutes, stirring occasionally.
  4. Serve warm.
