Oil-Free Chocolate Chip Cookies

You will need:

  • 1/2 cup sugar

  • 1/2 cup maple syrup

  • 2/3 cup unsweetened coconut butter

  • 1/4 cup plant milk

  • 4 tsp cornstarch

  • 2 tsp vanilla extract

  • 1 1/4 cup flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup dairy-free chocolate chips

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the sugar, maple syrup, coconut butter, plant milk, cornstarch and vanilla extract.

  3. Add flour, baking soda and salt. Stir until evenly combined—don’t worry if the dough is sticky!

  4. Fold in the chocolate chips.

  5. Use a 1 tbsp scoop to form the cookie dough into balls.

  6. Bake at 350 degrees for 12 minutes.

  7. Allow the cookies to cool for 10-15 minutes before serving.
