Broccoli Pesto

You will need:

  • 1 cup broccoli florets, roasted for 20-25 minutes

  • 1/4 cup basil (or sub half the basil for 1/8 cup tightly packed spinach)

  • 1/4 cup raw cashews

  • 1/4 cup nutritional yeast

  • 1 tbsp lemon juice

  • 1 tsp minced garlic

  • 1 tsp salt

  • 1/4 cup water or vegetable broth, plus more to blend

  • 1/4 cup olive oil

  • 3 tbsp nondairy milk

Instructions:

Add all ingredients to a high-speed blender or food processor and blend until creamy. Use it as a base for pizza toppings like I did, or serve with pasta!
