Classic Snickerdoodles (Vegan, Dairy-Free, Nut-Free)

Ingredients

  • 1/2 cup coconut oil
  • 1 cup + 3 tbsp sugar
  • 1/3 cup plant milk
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tbsp cinnamon

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly grease or line a baking sheet with parchment paper.
  2. In a large bowl, cream together coconut oil, 1 cup sugar, milk, and vanilla extract. Sift in flour, baking powder, and baking soda. Mix all the ingredients together to form a thick sugar cookie dough.
  3. In a separate dish, combine 3 tbsp sugar and 1 tbsp cinnamon.
  4. Scoop the cookie dough into 1 tbsp balls and roll in the cinnamon sugar mixture to coat. Transfer to baking sheet, leaving about an inch of space between each dough ball.
  5. Bake at 350 degrees for about 10 minutes. Cool completely before serving.
