Classic Snickerdoodles (Vegan, Dairy-Free, Nut-Free)

Ingredients
- 1/2 cup coconut oil
- 1 cup + 3 tbsp sugar
- 1/3 cup plant milk
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tbsp cinnamon
Instructions
- Preheat oven to 350 degrees Fahrenheit and lightly grease or line a baking sheet with parchment paper.
- In a large bowl, cream together coconut oil, 1 cup sugar, milk, and vanilla extract. Sift in flour, baking powder, and baking soda. Mix all the ingredients together to form a thick sugar cookie dough.
- In a separate dish, combine 3 tbsp sugar and 1 tbsp cinnamon.
- Scoop the cookie dough into 1 tbsp balls and roll in the cinnamon sugar mixture to coat. Transfer to baking sheet, leaving about an inch of space between each dough ball.
- Bake at 350 degrees for about 10 minutes. Cool completely before serving.
