Instant Pot Stewed Black Eyed Peas

Ingredients:

  • 1 tbsp oil
  • 1 small onion (about 1/2 cup, diced)
  • 2 cloves garlic (about 1 tsp), minced
  • 2 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp cayenne
  • 1/2 tsp crushed red pepper
  • 1/2 tsp dried ground thyme
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp liquid smoke
  • 2 cups diced fire-roasted tomatoes
  • 2 cups veggie broth
  • 1 cup dry black-eyed peas

Instructions:

  1. Set your Instant pot to the sauté function. When hot, add the oil and diced onion. Cook until translucent (about two minutes).
  2. Add the garlic, spices, salt and pepper, and liquid smoke and sauté for an additional three minutes.
  3. Cancel sauté function. Add tomatoes, veggie broth, and black eyed peas. Stir well.
  4. Place the lid on the Instant Pot, locking it in place. Make sure the steam valve is turned to ‘sealing.’
  5. Choose the pressure cook function and set the timer for 15 minutes.
  6. Once the timer goes off, allow the Instant Pot to naturally release pressure for 10 minutes.
  7. Using a towel, turn the steam valve to ‘venting’ to release remaining pressure until you hear the pin click and drop down.
  8. Serve warm.
