Instant Pot Stewed Black Eyed Peas

Ingredients:
- 1 tbsp oil
- 1 small onion (about 1/2 cup, diced)
- 2 cloves garlic (about 1 tsp), minced
- 2 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp cayenne
- 1/2 tsp crushed red pepper
- 1/2 tsp dried ground thyme
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp liquid smoke
- 2 cups diced fire-roasted tomatoes
- 2 cups veggie broth
- 1 cup dry black-eyed peas
Instructions:
- Set your Instant pot to the sauté function. When hot, add the oil and diced onion. Cook until translucent (about two minutes).
- Add the garlic, spices, salt and pepper, and liquid smoke and sauté for an additional three minutes.
- Cancel sauté function. Add tomatoes, veggie broth, and black eyed peas. Stir well.
- Place the lid on the Instant Pot, locking it in place. Make sure the steam valve is turned to ‘sealing.’
- Choose the pressure cook function and set the timer for 15 minutes.
- Once the timer goes off, allow the Instant Pot to naturally release pressure for 10 minutes.
- Using a towel, turn the steam valve to ‘venting’ to release remaining pressure until you hear the pin click and drop down.
- Serve warm.
