Story time: I developed a pea allergy during early childhood and couldn’t eat anything that contained peas until very recently. I’m not exactly sure what happened or when or how but I was about a week into a new bottle of vegan gummy vitamins when I just happened to glance down at the ingredients and saw ‘pea extract’ right there. Could it be that I had outgrown my pea allergy?!

I tested out the hypothesis over the next month by trying out dishes and products made with peas in various forms. For my friends with food allergies, I certainly do NOT recommend experimenting on yourself if you can help it but a) my pea allergy was not life-threatening or even nearly as severe as some of my other food allergies and b) I did not have access to an allergy specialist at the time.

Once I knew I was in the clear, I didn’t even have to think twice about which pea-based dish I’d make first: it had to be mattar paneer. I only ate a handful of times as a kid for obvious reasons but from what I remembered, it was creamy, spicy, and full of texture. The vegan version retains this richness of flavor and texture while swapping out the traditional paneer for extra firm tofu. Here’s how you make it!

Vegan Mattar Paneer (Dairy-Free, Gluten-Free)

Ingredients

For the "paneer"
  • 15 oz extra firm tofu, drained and pressed
  • 2 tsp apple cider vinegar
  • 1 tbsp nutritional yeast
  • 1 tbsp coconutmilk
For the gravy
  • neutral oil
  • 1 large red onion, roughly chopped
  • 2 cloves garlic
  • 2 tsp minced ginger
  • 1 1/2 cups crushed tomatoes
  • 1/4 cup raw cashews, soaked in water for 2 hours
  • 1/2 tsp turmeric
  • 1 green chili
  • salt, to taste
Aromatics
  • 1 cinnamon stick
  • 1/2 tsp fennel seeds
  • 1 tbsp dried coconut
Putting it all together
  • neutral oil
  • 2 bay leaves
  • 3/4 tsp cumin seeds
  • 1/2 tsp red chili powder
  • 1 cup green peas, fresh or frozen
  • 1/3 cup coconutmilk
  • 1 tsp fenugreek leaves
  • 1 tsp garam masala

Instructions

  1. To make the paneer, cube the tofu and toss with apple cider vinegar, nutritional yeast, and coconut milk. Set aside for 30 minutes to absorb flavors.
  2. Prepare the gravy in the meantime. Start by sautéing onion, garlic, and ginger in neutral oil until onions are soft and translucent (3 minutes). Add crushed tomatoes and cook for an additional 2 - 3 minutes. Transfer the mixture to a blender along with cashews, turmeric, green chili, and salt. Blend until smooth and creamy, adding water as necessary.
  3. Dry roast cinnamon and fennel until fragrant. Add dried coconut and roast for an additional minute or so, until coconut is browned. Add the mixture to a food processor and pulse into a fine powder.
  4. Heat about a tablespoon of oil in a large saucepan on medium heat. Add bay leaves and cumin seeds and sauté until sizzling.
  5. Add tofu and gently stir until coated in the cumin seeds. 
  6. Once the tofu starts to brown, add red chili powder and roasted aromatic spice powder. Continue stirring gently to coat.
  7. Add green peas and stir for a couple minutes, until softened. The tofu should be golden brown at this point.
  8. Pour in the cashew-based gravy and coconutmilk. Once the mixture begins to bubble, reduce heat and cover to cook for 5 minutes.
  9. Uncover the saucepan and stir in the fenugreek leaves and garam masala. Turn off heat.
  10. Serve warm over rice or with roti (Indian flatbread).

So I guess seitan is a trend now, huh? Us vegans have been on this for decades and East Asians were on it for centuries before ‘veganism’ was even a word. But the internet gods have spoken and I am glad that for once, they’ve chosen to put a plant-based food in the spotlight.

My go-to method for preparing seitan involves starting with vital wheat gluten, throwing in my spices and liquid of choice, and steaming the “dough” in my Instant Pot for 15 minutes or so. I’ve shared a tutorial on how to make seitan “chicken” from vital wheat gluten, which you can view here.

However, the seitan that’s been taking social media by storm involves using plain flour (instead of vital wheat gluten) and washing the dough several times until the starches separate from it, leaving a stretchy mass of protein (gluten) that you can flavor and cook as you see fit. It’s definitely more time consuming (and labor intensive) than my go-to method but it’s a great option for those who may not have access to vital wheat gluten.

Most of the washed flour recipes I’ve seen going around around are for a vegan chicken substitute so I thought I’d spice things up a bit and make pulled “pork” instead! It’s smoky, a little spicy, a little sweet, and has got a texture that will absolutely blow your mind!

Vegan Pulled Pork from Seitan (Washed Flour Method!)

Ingredients

  • 2 cups plain flour (at least 11% protein content)
  • 2/3 cup water, plus more to knead
  • 1/4 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp red chili flakes
  • 1/2 tsp minced garlic
  • 1 tsp ketchup
  • 1 tsp soy sauce
  • 1/2 tsp liquid smoke
  • 1 tsp neutral oil
  • 4 cups low sodium vegetable broth
  • 1/3 cup vegan barbecue sauce

Instructions

  1. Empty flour into a large, clean bowl. Gradually add water and mix until a dough begins to form. Knead until smooth and cover for 1 hour.
  2. After 1 hour, cover the dough completely with lukewarm water and begin to knead it. It will loosen up and begin to change texture as the starch is rinsed out. Drain and replace the water as it turns cloudy; you may have to do this 3 - 4 times before it runs fairly clear.* At this point, the dough should be elastic.
  3. After the final rinse, let the dough rest in a colander for half an hour to drain out any remaining starch water.
  4. Prepare the marinade. Whisk together cumin, paprika, red chili flakes, minced garlic, ketchup, soy sauce, and liquid smoke. 
  5. Brush marinade over the dough. Stretch, twist, and tie into a knot. Cover and let rest for at least 2 hours.
  6. Once the dough has marinated for the desired amount of time, prepare to cook it. Heat about a teaspoon of neutral oil in a large sauce pan and fry on medium heat for about 3 minutes on each side, or until crispy and golden brown.
  7. Cover with vegetable broth and bring to a boil. Reduce heat and simmer for 1 hour.
  8. Drain the broth and transfer seitan to a clean dish. Use a fork to shred it.
  9. Add barbecue sauce and mix until evenly coated. Serve immediately or store in the fridge and reheat as needed.

Notes:

Starch Water: You can reuse the water left over from Step 2 for other recipes, like this Starch Water Bacon (recipe by Seitan Society).

Cake Batter Baked Oatmeal Bites

It may look like a cupcake and it may taste like a cupcake but would you believe me if I told you this is oatmeal?! After nearly four years of running this blog, I’m finally jumping on board the oats train with some baked oatmeal bites that are going to blow your mind and your tastebuds.

I grew up in an oat-lovin’ family and while I appreciate a nice hot bowl of oatmeal every once in a while, I don’t want to start off every morning with… grain goop. The texture just isn’t it for me most days, which is why I’ve been experimenting with new, subtly textured ways to incorporate more of this heart-healthy grain into my diet. Baked oatmeal checks all of these boxes.

Cake Batter Baked Oatmeal Bites (Vegan & Gluten-Free)

Ingredients

For the oatmeal bites
  • 1 cup whole grain oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 cup cashews*
  • 1 tbsp flaxmeal
  • 2 tbsp maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 3/4 cup water or plant milk
  • 1/2 tbsp vegan sprinkles
For the frosting
  • 1/4 cup plan nondairy yogurt
  • 1/4 tsp vanilla extract
  • 3 tsp maple syrup (or sweetener of choice; more to taste)
  • optional: more sprinkles

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Lightly grease a muffin/cupcake pan.
  2. Cover cashews with boiling water and soak for at least 10 minutes. Once the cashews are soft, drain the water and set aside.
  3. Prepare the flax egg. Combine flaxmeal with 2.5 tbsp room temperature water and set aside for 5 minutes to thicken.
  4. Process the oats along with baking powder and salt in a high-speed blender or food processor.
  5. Add cinnamon, cashews, flax egg, maple syrup, vanilla extract, vanilla extract, almond extract, and water or milk. Blend until smooth. The consistency should resemble cake batter. Fold in sprinkles.
  6. Divide the batter between six cups in the muffin pan. Bake at 375 degrees for 10 - 12 minutes, or until the tops are golden brown and a toothpick inserted into the center of the muffin comes out mostly clean.
  7. To prepare the frosting, whisk together yogurt, vanilla extract, and maple syrup.
  8. Prior to serving, top each oatmeal bite with 1 - 2 teaspoons of frosting and more sprinkles, if desired.

Notes:

Substitutions: You can swap out the cashews for almond butter or another neutral-tasting nut butter in a 1:1 ratio. However, you should reduce the amount of liquid (water or milk) to 1/2 cup if you opt out of using cashews. You can add more water as you blend if you feel that the consistency of the batter is too thick.
