You will need...
For the crispy "crab" balls:
- 1 14 oz jar hearts of palm
- 1 cup plant milk
- 2 tsp apple cider vinegar
- 3/4 cup all purpose flour
- 1 tsp Old Bay seasoning
- 1 tsp salt
- 1/2 tsp paprika
- 1/2 tsp cayenne
- 1 1/2 cup Panko breadcrumbs
For the Goddess slaw:
- 1 cup broccoli slaw
- 1-2 tbsp Goddess dressing
For the Old Bay mayo:
- 2 tbsp vegan mayo
- 1 tsp Old Bay seasoning
To assemble:
- 8-10 corn or flour tortillas, lightly toasted
Directions:
- Preheat oven to 450 degrees Fahrenheit.
- Drain the hearts of palm. Cut each heart into slices about 1/2 inch thick.
- To a small bowl, add plant milk and vinegar. Set aside for about 10 minutes to thicken and turn into vegan buttermilk.
- In another bowl, whisk together flour, salt, seasoning and spices.
- To a third and final bowl, add Panko breadcrumbs.
- Create an assembly line to coat the hearts of palm by first dipping each slice into the flour mixture, followed by the vegan buttermilk, then back into the flour mixture and finally into the breadcrumbs.
- Once all the slices have been coated, place them on a lightly oiled baking tray and bake at 450 degrees for about 10 minutes on each side.
- While the "crab" balls are baking, prepare the Goddess slaw and Old Bay Mayo. To prepare the Goddess slaw, simply add desired amount of dressing to the broccoli slaw and gently toss to coat. To make the Old Bay mayo, whisk together mayo and Old Bay seasoning until evenly incorporated.
- When the crab balls have finished baking, assemble tacos by placing 2-3 in each shell along with the slaw and Old Bay mayo. Serve immediately.
