You will need:
- 1 lb fingerling potatoes, scrubbed and rinsed
- 1/4 cup extra virgin olive oil
- 1-2 tsp salt
- 1 tsp dried parsley
- 1 tsp dried oregano
- Preheat oven to 500 degrees Fahrenheit.
- Place fingerling potatoes in a large mixing bowl. Add oil, salt and herbs. Toss to coat
- Place the potatoes on a baking tray. Bake at 500 degrees for about 20 minutes, stirring occasionally.
- Serve warm.
