You will need:
1 1/4 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup vegan butter
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup plant milk
1 tsp vanilla extract
1 cup vegan graham crackers, crushed
1/2 cup dairy-free chocolate chips
12 Dandies vegan marshmallows, halved
Preheat oven to 350 degrees Fahrenheit. Line a baking tray with parchment paper.
In a large mixing bowl, combine flour, baking soda, baking powder and salt.
In a separate bowl, cream together the vegan butter, brown sugar, white sugar, plant milk and vanilla extract.
Pour the wet mixture into the dry and stir until it forms cookie dough.
Fold in crushed graham crackers and dairy-free chocolate chips.
Scoop the cookie dough into 1 tbsp balls. Place one half of a Dandies marshmallow in the center of each ball and roll to secure.
Bake at 350 degrees for 15-17 minutes. Allow to cool completely before serving.
