I am officially on the viral baked oats train and I just cannot seem to get off it! First, I made these Cake Batter Baked Oatmeal Bites. Next, Peaches and Cream Baked Oats. And now? Let me introduce you to Black Forest Baked Oats aka my favorite kind of chocolate cake but for breakfast.
Just like my other baked oat recipes, this one requires a blender and a few kitchen staples. However, I decided to try something new by baking the oats in my air fryer instead of popping it in my oven as I usually do. And surprise — it worked! (If it didn’t, I wouldn’t be sharing it here ;))
So if a heart-healthy cake for breakfast sounds good to you, drop what you’re doing and go make a batch of Black Forest Baked Oats!
Vegan Black Forest Baked Oats (Dairy-Free, Gluten-Free, Nut-Free Option)
Ingredients
- 1 cup whole grain rolled oats
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 heaping tbsp almond butter*
- 1 tbsp vegan mayo*
- 3/4 cup nondairy milk
- 2 tbsp maple syrup or sweetener of choice
- 1/3 cup dairy-free chocolate chips
- 1/3 cup frozen cherries
Instructions
- If you are using an oven, preheat it to 360 degrees Fahrenheit. Skip this step if you are using an air fryer like I did.
- To a high speed blender, add oats, cocoa powder, baking soda, and salt. Process a few times to break up the oats and any clumps in the cocoa powder.
- Add almond butter, mayo, milk, and maple syrup. Blend until smooth and creamy. Fold in chocolate chips and cherries.
- Divide the mixture between two (or more) lightly greased ramekins. Preheat the air fryer to 360 degrees Fahrenheit and bake for 7 - 9 minutes, until the baked oats resemble a large cupcake.
- Cool for a few minutes prior to serving.
Notes:
Substitutions:
- Use a different nut or seed butter in place of almond butter, in a 1:1 ratio. I have tested this with sunflower seed butter and it works just as well!
- Use a different egg substitute in place of vegan mayo, such as 1 tbsp of Just Egg or a flax/chia egg.
