I am officially on the viral baked oats train and I just cannot seem to get off it! First, I made these Cake Batter Baked Oatmeal Bites. Next, Peaches and Cream Baked Oats. And now? Let me introduce you to Black Forest Baked Oats aka my favorite kind of chocolate cake but for breakfast.

Just like my other baked oat recipes, this one requires a blender and a few kitchen staples. However, I decided to try something new by baking the oats in my air fryer instead of popping it in my oven as I usually do. And surprise — it worked! (If it didn’t, I wouldn’t be sharing it here ;))

Vegan Black Forest Baked Oats (Dairy-Free, Gluten-Free, Nut-Free Option)

Vegan Black Forest Baked Oats (Dairy-Free, Gluten-Free, Nut-Free Option)

Prep time: 6 MinCook time: 9 MinTotal time: 15 Min

Ingredients

  • 1 cup whole grain rolled oats
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 heaping tbsp almond butter*
  • 1 tbsp vegan mayo*
  • 3/4 cup nondairy milk
  • 2 tbsp maple syrup or sweetener of choice
  • 1/3 cup dairy-free chocolate chips
  • 1/3 cup frozen cherries

Instructions

  1. If you are using an oven, preheat it to 360 degrees Fahrenheit. Skip this step if you are using an air fryer like I did. 
  2. To a high speed blender, add oats, cocoa powder, baking soda, and salt. Process a few times to break up the oats and any clumps in the cocoa powder.
  3. Add almond butter, mayo, milk, and maple syrup. Blend until smooth and creamy. Fold in chocolate chips and cherries.
  4. Divide the mixture between two (or more) lightly greased ramekins. Preheat the air fryer to 360 degrees Fahrenheit and bake for 7 - 9 minutes, until the baked oats resemble a large cupcake.
  5. Cool for a few minutes prior to serving.

Notes:

Substitutions:

  1. Use a different nut or seed butter in place of almond butter, in a 1:1 ratio. I have tested this with sunflower seed butter and it works just as well!
  2. Use a different egg substitute in place of vegan mayo, such as 1 tbsp of Just Egg or a flax/chia egg.

In my experience, the tastiest foods always make the biggest messes and this Pimento Grilled Cheeze is no exception. It’s just as satisfying as it is sloppy and I love making it as a late night snack or even just a midday pick-me-up.

If you aren’t familiar with this type of sandwich, let me introduce you to the wonderful world of pimento cheese. Like many comfort foods, this spread originates from the Southern U.S. The traditional recipe is obviously not vegan and honestly seems like it would create a nightmare situation for the lactose-intolerant humans of the world.

Vegan Pimento Grilled Cheese (Dairy-Free, Gluten-Free, Nut-Free)

Ingredients

  • 1/2 cup vegan cream cheese
  • 1/4 cup vegan mayo
  • 1/2 cup vegan cheddar or colby jack cheese, shredded
  • 1/4 cup roasted red peppers, diced
  • 1/2 tsp crushed red pepper
  • 1/2 tsp hot sauce
  • 1/4 tsp smoked paprika
  • 3/4 tsp garlic powder, divided
  • 1/4 tsp onion powder
  • 4 slices sourdough of choice
  • 1 tbsp vegan butter
  • 1 tbsp nutritional yeast

Instructions

  1. To prepare the pimento cheese, mix together cream cheese, mayo, shredded cheese, roasted red peppers, crushed red pepper, hot sauce, paprika, garlic powder, and onion powder until well incorporated.
  2. Spread about a teaspoon of vegan butter on one side of each slice of bread. Sprinkle an equivalent amount of nutritional yeast as well as about 1/8 tsp garlic powder on each slice.
  3. Add two slices of bread to a pan on medium heat, buttered side down. Spread about half the pimento cheese on each slice. Add the remaining slices on top, buttered side up, to form the sandwiches.
  4. Cover the pan to melt the cheese for approximately 1 - 2 minutes, or until the bottom side of bread is golden brown. Flip and cook the other side for an additional minute or so, until golden brown.
  5. Serve immediately.

There’s baked oatmeal… and then there are baked oats. And if you thought they were the same thing, so did I until the latter became a trend. You see, baked oatmeal still retains the porridge-like properties of traditional oatmeal whereas baked oats are basically cake.

I’ve seen loads of baked oats recipes going around the internet lately and almost all of them are trying to be some type of brownie or cookie. What I haven’t seen enough of are baked versions of the traditional flavors I loved as a kid: maple and brown sugar, apples and cinnamon, and anything from Quaker’s “fruit & cream” instant oats collection. My personal favorite? Peaches & Cream, of course!

So now I present to you Peaches & Cream Baked Oats: all of the flavor and nostalgia from an instant oatmeal packet but packed into a creamy, cake-y dessert-for-breakfast type situation. This stuff actually tastes like fresh homemade pie and it will absolutely make your morning a million times better!

Peaches and Cream Baked Oats (Vegan, Gluten-Free)

Peaches and Cream Baked Oats (Vegan, Gluten-Free)

Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • 1/2 cup rolled whole grain oats
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 peach (about 3/4 cup) fresh or frozen, sliced
  • 1/2 cup nondairy milk
  • 1 tbsp Just Egg*
  • 1 heaping tbsp almond butter*
  • maple syrup*
  • optional: 
  • 1 tbsp vegan cream cheese

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease the inside of an oven-safe baking dish.
  2. Process oats, salt, and baking soda into a fine powder. Add sliced peaches, milk, egg substitute, almond butter, and maple syrup to taste. Blend until smooth and creamy.
  3. Transfer mixture to baking dish and bake at 350 degrees for 10 minutes.*
  4. To prepare the optional topping, whisk together cream cheese and about a teaspoon of maple syrup (more or less, to taste).
  5. Once the oats are golden brown, remove the dish from the oven and allow to cool for 3 - 5 minutes. Serve with cream cheese topping and more sliced peaches, if desired.

Notes:

Substitutions

  1. You can swap out the Just Egg for any other plant-based egg substitute of choice - just make sure you use the equivalent of 1 egg! Suitable options include flax/chia eggs (1 tbsp seeds mixed with 2.5 tbsp water, until thickened) or store-bought vegan egg replacers.
  2. You can use any nut or seed butter in place of the almond butter. Substitute in a 1:1 ratio but keep in mind that some butters such as peanut and hazelnut are less neutral and will impact the overall flavor of the final product.
  3. Swap out the maple syrup for your choice of sugar or liquid sweetener.


Baking Time

I prefer my baked oats on the creamier side, especially for this recipe. If you prefer a more cake-like consistency, bake these for 12 - 14 minutes.
